In Season: Asparagus

The end of April welcomes the start of the British asparagus season! So we thought we would take a closer look at one of the countries most sought after spring-summer vegetables and share one of our favourite recipes with you.

This versatile vegetable can be boiled, steamed, grilled, roasted and even BBQ'd!

Growing Asparagus is very labour intensive as all spears have to be individually hand picked, this is because they are picked when they reach a certain length and they will not necessarily all reach at the same time. Asparagus grows best in cool dry weather which means that we should expect some perfect asparagus this year!

Asparagus is packed with goodness and is known for it's health benefits such as reducing bloating and containing both vitamin K and C.

  • An asparagus spear can grow up to 10cm in just one day!
  • Asparagus can help to cure hangovers (hoorah!) and can also protect the liver against toxins.
  • Asparagus is a scientifically-proven aphrodisiac and will even increase sperm count!

RECIPE: Sourdough bread with Avocado, Asparagus and a Poached Egg

This super healthy recipe is the perfect brunch or lunch. A simple and healthy make for a family meal or entertaining.

Ingredients

Sourdough Bread
Avocado
Chilli Flakes
Asparagus
Egg

Method

First, peel your avocado and mash with a fork in a bowl, adding salt, pepper and your preferred amount of chilli flakes.

There are a couple of options when it comes to cooking your asparagus: Boiling: Salted water and no longer than 5 minutes will make for the perfect asparagus still with a slight crunch. OR Griddle: Simply add a little oil and turn occasionally until tender.

Whilst your asparagus is cooking: Grill or toast your sourdough bread AND Heat your water in a pan ready for poaching your egg. Cook your egg to your preferred consistency.

To Assemble: Generously spread your avocado and chilli mix onto your sourdough toast

Place your poached egg on top followed by your asparagus. Season with salt and pepper to taste.
