Simple Roasted Red Pepper, Tomato & Chilli Soup

There's nothing more comforting than a piping hot bowl of homemade soup to warm you up on a cold, crisp Spring day. It's also healthy, so if you're still trying to make amends for overindulging through Winter this one's for you!

We thought we'd share this super simple soup recipe with you so you can snuggle up with some guilt free comfort food before the warmer weather hits!

Simply-Kitchens-Plymouth

Ingredients:

1 Large Onion
2 Red Peppers
600g Vine/Cherry Tomatoes
1 Tin of Chopped Tomatoes
3 Cloves of Garlic
2 tsp Parprika
500ml Vegetable Stock
1-2 Chillies

Method:

    1. Remove the seeds from the peppers and roughly chop into 5 pieces, place your chopped peppers and cherry tomatoes into a baking tray, drizzle a little oil and season with salt and pepper. Roast them in the oven until they are soft and just starting to blacken. (You can choose to peel the skin from the peppers at this point if you prefer a smoother soup.)

    2. Roughly chop your onion, garlic, and chillies, cook in a pan using a small amount of oil. Once soft, add your roasted veggies, paprika, stock and tin of chopped tomatoes. Stir well and cook through until bubbling and simmer for 10 minutes. You can add as little or as much stock as you like depending on how thick you would like your soup.

    3. Blend your soup to your desired texture and serve with a sprinkle of coriander and a chunk of your favourite bread. Easy!

Note: Roasting your peppers and tomatoes will give them a much fuller and sweeter flavour.
